
Ingredients:
• Basmati Rice – 1.5 cups
• Cabbage – 1
• Green peas – 1 cup
• Onions – 2
• Tomato – 1
• Green chillies – 2
• Garlic – 5 Cloves
• Ginger – a small piece
• Cumin – 1 tsp
• Coriander powder – 2 tbsp
• Turmeric powder – a pinch
• Red Chilli powder – 1 tsp
• Peanuts – 1 tbsp
• Coriander – a small bunch
• Oil – 2 tbsp
• Salt
Method:
- Cook the rice and transfer to a dish to cool.
- Shred the cabbage and add water, a pinch of salt, a pinch of turmeric powder and boil it.
- Soak the peas overnight and cook it.
- Chop onions, tomatoes, garlic, chillies and ginger.
- In a big frying pan, add oil, cumin, chillies and ginger and allow it to splutter.
- Add the chopped onions and when it turns light golden brown in colour, add tomatoes and garlic to it. Add cooked cabbage and peas to it.
- Add coriander powder, red chilli powder and toss it together. Add salt to it.
- When it is almost done, in a small frying pan, add 1 tsp of oil, and fry the peanuts and then add it.
- Add the cabbage masala to the rice and mix it well. Garnish it with coriander.
