Ingredients:

• For Koftas:
• 5 – Potatoes (Boiled and mashed)
• 1 Cup – Spinach (chopped)
• 1/2 Cup – Fenugreek leaves (chopped)
• 1/2 Cup – Coriander leaves (chopped)
• Salt to taste
• 1 tsp – Lime juice
• 1/2 cup – Besan (Gram flour)
• 1/4 tsp – Red Chilli powder
• Oil for frying
• For Gravy:
• 2 – Onions (finely chopped)
• 1 -Tomato (large, pureed)
• 1 cup – Plain yogurt (dahi)
• 1 cup – Milk
• 1/4 cup – Cream
• 1/2 tsp – Turmeric powder
• 2 tsp – Coriander powder
• 1/2 tsp – Sugar
• Salt
• 1/4 tsp – Garam Masala powder
• 4 tbsp -Oil
• Grind to paste:
• 10 – Almonds
• 2 tbsp – Poppy Seeds
• 1 tbsp – Ginger pieces
• 5 – Garlic Cloves
• 3 – Green chillies

Method:

  1. For Kofta:
  2. Mix all the ingredients for kofta together, divide into equal portions, shape into balls and deep-fry till golden in colour. Drain the excess oil in an absorbent paper and keep aside.
  3. For Gravy:
  4. Heat oil in a pan, fry the onions until they turn golden brown, add the ground ingredients and fry for a few minutes.
  5. Add turmeric powder, coriander powder, sugar, and salt and again stir and fry for a few seconds.
  6. Add tomato puree and cook everything on high heat, stirring continuously. Cook till the oil begins to separate.
  7. Now add yoghurt, milk and cream and stir continuously till the oil begins to separate.
  8. Add a cup of water and bring to boil; simmer for 5 to 10 minutes until the gravy thickens.
  9. To serve, place the fried koftas in a serving dish and pour the hot gravy over it. Garnish with garam masala powder and chopped coriander.
