
Ingredients:
• 125 gms – Maida
• 1 tsp – baking powder
• 4 – eggs
• 125 gms – powdered Sugar
• 50 ml – oil
• 2 tsp – vanilla essence
Method:
- Grease a 9-inch baking dish with 1 tsp of butter and dust it with 1 tbsp of flour.
- Sieve the flour and baking powder thrice.
- Preheat oven at 180 degrees C.
- Separate the egg white and egg yolk and place it separately in 2 wide bowls.
- Beat the egg white with powdered sugar using a beater until it is very smooth.
- Beat egg yolk with oil and vanilla essence until it is creamy.
- In this mixture, gently add egg white mixture and sieved flour in batches of three.
- Mix it gently with a thick steel ladle. Now the cake batter is creamy and medium thick in consistency.
- Transfer this cake mixture into a greased and dusted baking pan.
- Spread it evenly with a flat spatula and bake at 180 degrees C for 30 – 35 minutes or till it is golden brown in colour.
- Remove it from the oven and set it aside to cool for 15 minutes.
- Run a knife round the inside of the pan to loosen the cake and then invert the pan.
- Set it aside to cool on a wire rack for half-an-hour and later cut it into desired shapes and sizes.
