Ingredients:
• Pineapple – 1, medium size, not fully ripe.
• Chilli powder – 1 tsp.
• Ginger – 1 tsp, chopped.
• Grated Coconut – 1/2 cup.
• Turmeric powder – 1/2 tsp.
• Coriander powder – 2 tsp.
• Cinnamon – 2″ piece.
• Cardamom – 2 pieces.
• Ghee or oil – 2 tbsp.
• Salt to taste.
Method:
- Peel the pineapple and cut into small pieces.
- Grind the coconut and the spices into to a fine paste.
- Heat ghee or oil in a pan and saute the ground paste till fragrant.
- Add pineapple pieces and salt.
- Add a cup of water.
- Cover the pan and simmer till the pineapple is soft and the gravy is creamy.
- Serve hot with chapattis.
