Ingredients:

• 1 cup – amarantha greens or palak, finely chopped
• 1/3 cup – cooked toor dal, mashed
• 1/2 tsp – chilli powder
• 1/2 tsp – black pepper powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Cumin seed powder
• 2 tsp – garlic, crushed
• 2 tsp – Jaggery powder
• 1 tsp – mustard
• Salt and Lime juice to taste
• a few Curry leaves
• 2 tsp – oil

Method:

  1. Mix the greens with all the powders and garlic.
  2. Add about 6 cups of water and heat.
  3. When it begins to boil, lower the heat and simmer for 10-15 minutes.
  4. Stir in the dal, simmer for 2 more minutes.
  5. Add salt, jaggery and lime juice. Stir well and remove from heat.
  6. Heat the oil and add mustard.
  7. When it splutters, add curry leaves and add it to the saaru.
  8. Serve hot with steamed rice.
