
Ingredients:
• 1 – Beetroot
• 2 – Carrots
• 3/4 tsp – sambar powder
• 1 – Onion
• 3 tbsp – grated Coconut
• 1/4 tsp – Turmeric powder
• 1 tsp – oil
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• Curry leaves – a few
• Salt as needed
Method:
- Grate beetroot and carrots. Chop the onions finely.
- Heat oil in a pan and splutter mustard seeds, curry leaves and urad dal.
- Saute for a while and add the onions and fry till they become transparent.
- Add sambar powder, turmeric powder and salt.
- Saute for a minute and add grated beetroot and carrots.
- Sprinkle few tbsps of water and keep stirring this.
- Add coconut and mix well.
- Serve hot.
