Ingredients:
• 1 packet – firm tofu, cut into bite-sized pieces
• 2 – medium red Onions
• 1 – medium green bell pepper, cut into medium pieces
• 1 – medium red bell pepper, cut into medium pieces
• 8-10 Cloves – Garlic
• 1-inch – Ginger
• 1 cup – fresh Coriander leaves
• 10 – Green chillies
• 1 – medium tomato, finely chopped
• 1/2 tsp – Garam Masala
• 1/2 tsp – coriander powder
• 1/2 tsp – cumin powder
• oil
• salt and Sugar to taste
Method:
- In a food processor, combine red onions, green chillies, coriander leaves, garlic and ginger.
- Heat oil in a kadhai, add the ginger-coriander paste and fry till brown.
- Add garam masala, coriander powder and cumin powder.
- Add finely chopped tomatoes and fry for 5 minutes.
- Add both green and red peppers and cook for 2 minutes on high heat.
- Add a pinch of sugar and salt per taste.
- Reduce heat and add the tofu. Carefully stir the mixture and cover and cook for 5 minutes.
- Garnish with coriander leaves.
