Ingredients:
• Basmati Rice – 1 cup
• Mint – 100 g
• Coriander leaves – 100 g
• Garlic – 10 Cloves
• Ginger – 1 inch
• Onion chopped – 1 cup
• Peas – 1/2 cup
• Capsicum chopped – 1/2 cup
• Mustard – 1 tsp
• chenna dal – 1 tsp
• Red Chilli powder – 1 tsp
• Turmeric powder – 1/2 tsp –
• Garam Masala powder – 1 tsp
• Oil – 4 tbsp for frying
• Salt to taste
Method:
- Wash and cook rice with 1.5 cup of water and set aside.
- Clean and wash mint and coriander leaves. Grind them into a paste in a mixer.
- In a frying pan, heat oil and add mustard seeds.
- After it splutters, add chenna dal, garlic, chopped onion, chopped ginger and fry till onion is golden brown.
- Then, add capsicum and peas and fry again till capsicum is soft.
- Now, add salt and turmeric powder over this.
- Add the red chilli powder, cook till the raw smell vanishes and oil separates.
- Add mint and coriander paste over this and cook for a minute.
- Over this, add the garam masala and mix well.
- Over this gravy spread the cooked rice and mix well.
- Serve hot with onion raita.
