Ingredients:
• 2 cups – flour
• 125g – Butter or margarine
• 3/4 cup – castor Sugar
• 2/3 cup – Milk
• 2 – eggs
• 1 tsp – vanilla essence
• a pinch – salt
• For the icing:
• 3 cups – icing Sugar
• pink food colouring
• hot water to mix
• To decorate: icing Sugar with green colouring
• glace Cherries
• glace Pineapple
Method:
- Beat butter, sugar, and vanilla essence till light and fluffy.
- Add eggs one by one, beating well after each addition.
- Add the sieved ingredients (flour and salt) to the creamed mixture alternately with milk. Combine well.
- Spoon mixture into greased patty pans.
- Bake at 180 degree C for 15 minutes, or until golden brown.
- Remove from oven and cool on wire rack.
- Sift icing sugar, colour, and water to make a smooth consistency.
- Immediately spread on each cake and decorate with piped green icing, pineapple, and glace cherries.
