Ingredients:

• 1/2 kg – bhuna keema
• 1/2 tsp – oil
• 1 – medium onion-chopped coarsely
• 1 – tomato-chopped coarsely
• 1 tsp – salt
• 1/2 tsp – chilli powder
• 2 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 2 – medium sized Brinjals
• For garnish:
• 2 tbsp – coriander leaves, chopped
• 2 – Green chillies

Method:

  1. Pierce the brinjals with a fork and place them in a microwave safe dish. Cook uncovered on high for 20 minutes.
  2. Transfer into a pan of water and peel when cool enough to handle.
  3. Mash the pulp and keep aside.
  4. Mix together the oil, onions, tomato, salt, chilli powder, coriander powder and the turmeric.
  5. Cook uncovered on high for 5 minutes.
  6. Mix in the brinjals and the bhuna keema.
  7. Cook uncovered at 70 % for 15 mins, stirring once.
  8. Serve garnished with coriander leaves and the green chillies.
