Ingredients:
• 1/2 kg – bhuna keema
• 1/2 tsp – oil
• 1 – medium onion-chopped coarsely
• 1 – tomato-chopped coarsely
• 1 tsp – salt
• 1/2 tsp – chilli powder
• 2 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 2 – medium sized Brinjals
• For garnish:
• 2 tbsp – coriander leaves, chopped
• 2 – Green chillies
Method:
- Pierce the brinjals with a fork and place them in a microwave safe dish. Cook uncovered on high for 20 minutes.
- Transfer into a pan of water and peel when cool enough to handle.
- Mash the pulp and keep aside.
- Mix together the oil, onions, tomato, salt, chilli powder, coriander powder and the turmeric.
- Cook uncovered on high for 5 minutes.
- Mix in the brinjals and the bhuna keema.
- Cook uncovered at 70 % for 15 mins, stirring once.
- Serve garnished with coriander leaves and the green chillies.
