
Ingredients:
• 1 kg – sweet potato, peeled and cut into 3 cm pieces
• 5 cups – Chicken stock
• 1 – Onion finely chopped
• 2 Cloves – garlic, crushed
• 2 tbsp – grated Ginger
• 2 tsp – Garam Masala
• 1 cup – buttermilk
• Chilli oil to taste
• Olive oil to taste
• 1/2 cup – water
Method:
- Peel and boil the sweet potato.
- Heat 1 tbsp of olive oil in a large saucepan.
- Add onion, garlic and ginger and cook over low heat until onion is soft.
- Add boiled sweet potato and garam masala and cook for 2 mins.
- Add water. Bring to a boil and simmer for 5 mins.
- Process in a food processor until smooth, then return to the saucepan.
- Stir in buttermilk, chilli oil and heat through.
- Serve sprinkled with coriander leaves.
