Ingredients:

• 2 cups – mascarpone cheese (500g)
• 20 – strawberries
• 3/4 cup – Sugar
• 2 tbsp – agar agar powder/gelatine powder
• 1/4 cup – water
• 30 – plain biscuits (for crust)
• 2 tbsp – Butter

Method:

  1. Beat the mascarpone cheese and sugar in a large bowl.
  2. Chop the strawberries and grind them into a smooth puree.
  3. Mix the strawberry puree to the mascarpone cheese and mix again.
  4. Heat 1/4 cup water and add agar agar powder, stir until it gets dissolved. Keep aside until it cools.
  5. Pour the agar agar water into the mascarpone and strawberry mixture, mix again well.
  6. Pour this cheese mixture over the already prepared biscuits crust and refrigerate overnight for 12 hours. Serve chilled with fresh strawberries.
