Ingredients:

• 4 – large eggs
• 600 ml – Milk
• 4 oz – fresh breadcrumbs
• 1 tbsp – chopped Parsley
• Some chopped Thyme
• 2 tbsps – chopped chives or scallions
• Salt
• Pepper
• 2 tbsps – Butter

Method:

  1. Preheat the oven to 400 degrees F.
  2. Beat the eggs lightly, then add the milk, breadcrumbs, herbs and seasoning and mix well.
  3. Heat 1 tbsp of the butter in a pan until it starts foaming, then pour in the mixture
  4. Cook over a low flame until it is brown underneath and just set on top.
  5. Put it in the oven to finish cooking – around 20 minutes.
  6. Serve cut into wedges with a knob of butter on each piece.
