Ingredients:

• 2 cups – basmati Rice
• 250 ml – Coconut Milk
• 3-4 – Cardamom pods
• 1 cup – Methi leaves, chopped
• 1 cup – palak, chopped
• 2-3 tbsp – Ghee
• 1 pinch – Turmeric powder
• 4-5 – Cloves
• 2 tsp – cumin
• Curry leaves

Method:

  1. In a pan, heat ghee, add cumin, cloves and cardamoms. Add turmeric powder and curry leaves. Set aside. Cook rice in pressure cooker.
  2. Add palak and methi to rice, along with cardamom and cumin mixture.
  3. Add coconut milk and 2-3 cups of water.
  4. Serve hot with raitha.
