
Ingredients:
• 2 cups – cooked basmati Rice
• 1/2 tsp – Cumin seeds
• 1/2 tsp – ajwain seeds
• 1/2 cup – sweet Corn kernels
• 1 cup – paneer, cubed
• Few – Curry leaves
• Salt – to taste
• Oil – as required
• To grind:
• 1 tbsp – Coriander seeds
• 1 tbsp – Channa dal
• 1 tbsp – Urad Dal
• 2 – dry Red Chillies
• 1 – Cinnamon stick
• 1 tsp – peppercorns
• 1 tsp – Fennel seeds
Method:
- Dry roast the spices in the ‘To grind’ list into a fine powder and keep aside.
- Heat enough oil and fry the cumin seeds, ajwain seeds and curry leaves.
- Immediately add the cubed paneer and fry for few minutes.
- Next add the sweet corn kernels and cook for a few seconds.
- Add the spice powder and salt to the pan.
- Cook for a few minutes on a simmer.
- Finally add the cooked rice and toss gently until it is well mixed.
- Serve hot with papads or chicken masala.
