Ingredients:

• 2 cups – cooked basmati Rice
• 1/2 tsp – Cumin seeds
• 1/2 tsp – ajwain seeds
• 1/2 cup – sweet Corn kernels
• 1 cup – paneer, cubed
• Few – Curry leaves
• Salt – to taste
• Oil – as required
• To grind:
• 1 tbsp – Coriander seeds
• 1 tbsp – Channa dal
• 1 tbsp – Urad Dal
• 2 – dry Red Chillies
• 1 – Cinnamon stick
• 1 tsp – peppercorns
• 1 tsp – Fennel seeds

Method:

  1. Dry roast the spices in the ‘To grind’ list into a fine powder and keep aside.
  2. Heat enough oil and fry the cumin seeds, ajwain seeds and curry leaves.
  3. Immediately add the cubed paneer and fry for few minutes.
  4. Next add the sweet corn kernels and cook for a few seconds.
  5. Add the spice powder and salt to the pan.
  6. Cook for a few minutes on a simmer.
  7. Finally add the cooked rice and toss gently until it is well mixed.
  8. Serve hot with papads or chicken masala.
