
Ingredients:
• 2 cup – fresh Coconut Milk
• 1 cup – basmati Rice
• 1 tbsp – Curd
• 4 – Red Chillies
• 1 – Onion
• 1 – Tomato
• 1 tsp – Ginger
• 1 tsp- Garlic
• A few – Cashew nuts
• Salt to taste
• 3 tsp – oil
• 1 tsp – Ghee
Method:
- Grind ginger, garlic, red chillies with curd into paste.
- Add oil and ghee in a large pan and saute onions till light brown.
- Add tomatoes and the paste and saute well till oil separates from the gravy.
- Add coconut milk and bring to boil.
- Add rice and salt and cook in low flame till done.
- Fry cashew nuts and add to rice.
- Garnish with coriander leaves.
- Serve hot with onion raita.
