Ingredients:
• 6 bunches Spinach
• 1.5 cups – spaghetti
• 8 to 9 cubes cheese(grated)
• 100 gm – cottage cheese(chopped)
• 1 tsp – Butter for greasing the dish
• 2 tsp – pepper
• salt to taste
• pinch of soda
• For White Sauce:
• 5 tbsp – Butter
• 5 tbsp – flour
• 5 cups – Milk
• salt and pepper powder as per taste
Method:
- Clean and wash the spinach.
- Chop finely.
- Cook with a pinch of soda but without water.
- Grind the spinach coarsely.
- Boil the spaghetti in 2 to 3 cups water for 8-10 mins.
- Drain the water and set aside.
- Prepare the white sauce, making sure that it is slightly thick (pouring consistency).
- Add to it, the spinach, and spaghetti, small pieces of cottage cheese, pepper and salt to taste. Then mix.
- Pour into a greased oven proof baking dish. Cool.
- Top the mixture with grated cheese.
- Bake in an oven at 200 C for 45 mins to 1 hour.
- Serve hot in the same dish along with garlic bread.
- For white sauce:
- Lightly heat butter in a non-stick pot.
- Add flour and saute on a low flame till light brown.
- Add milk and stir continuously to avoid forming lumps.
- Give it a boil, stirring continuously.
- Reduce the flame and cook till you get a little thick, but pouring consistency.
- Remove from flame. Cool for few minutes.
- Add salt and pepper and mix well.
