Ingredients:
• 1 bunch – Spinach (finely chopped)
• 2 medium – Tomatoes (peeled and chopped)
• 2 medium – Onions (finely chopped)
• 2 cups – cooked vegetables of your choice like Carrot, Peas, Beans, Cauliflower, Potato (cut these vegetables into cubes and then cook them with little salt)
• 1 tbsp – fried Groundnut
• 1 tbsp – Cumin seeds
• 3 tbsp – Coconut flakes
• 1/2 tsp – Red Chilli powder
• 1/2 tsp – Garam Masala Powder
• 1/2 cup – Buttermilk & Water
• 2 – 3 tbsp – Oil
• Seasoning: Coriander, Salt to taste and Turmeric powder
Method:
- Heat little oil in a pressure pan and add seasoning (mustard, urud daal and channa daal) to it.
- Add the groundnut and spinach to it, along with some salt and turmeric powder. Pour over buttermilk, cover with a lid and allow it to cook.
- In another pan, deep fry the onions and tomatoes with some garam masala and red chilli powder.
- After the spinach is well cooked, pour in the onion-tomato mixture, add the cooked vegetables, coconut flakes and cumin seeds to it.
- Cook with a covered lid for a while (if necessary pour some water).
- Finally put some coriander on top of it. Your spinach kurma is ready.
