Ingredients:

• 2 cups – basmati Rice
• 1 cup – chopped vegetables (potatoes, carrots, cauliflower, capsicum, broccoli, beans and pealed green peas)
• 1/2 onion, finely chopped
• 1/2 handful – Mint leaves, chopped finely
• 1 – green chilli, slit vertically
• 1 tbsp. Garam Masala
• 1/2 tsp – Red Chilli powder
• 1 – Bay Leaves
• 1 inch piece – Cinnamon stick
• 2 – Cloves
• 1 tsp – Cumin seeds
• 2 tbsp – oil
• Salt to taste

Method:

  1. Heat oil in a pressure cooker, add cumin seeds, bay leaf, cinnamon and cloves.
  2. Saute for a while and add the chopped onions and the slit green chilli.
  3. Fry until onions are golden brown.
  4. Wash rice and soak for about 15 mins.
  5. Add the soaked rice to the fried onions in the cooker and fry for 2 mins till the dampness goes.
  6. Then add the vegetables, salt, chilli powder, garam masala powder and the chopped mint leaves with 4 cups of water and mix well.
  7. Cook till done, mix well, serve.
