Ingredients:

• ¾ cup – crushed Peanuts
• ¾ cup – minced Onion
• ½ cup – Brown sugar
• 3 slices tinned Pineapple
• 1 tsp – garlic, minced
• 2 tsp – coriander roots, washed and chopped
• 1 tsp – black pepper Corns
• 1 tbsp – light soya sauce
• 2 tbsp – oil

Method:

  1. Drain the pineapple from the syrup and cut each slice into 8 pieces.
  2. Crush garlic, coriander roots and pepper corns to a coarse paste.
  3. Heat the oil and fry onion till brown.
  4. Add the crushed garlic mixture and fry till fragrant.
  5. Add peanuts, Soya sauce and brown sugar.
  6. Mix well and add little salt if needed.
  7. Cook stirring till the mixture holds together.
  8. Cool slightly and shape into 1 cm round pellets.
  9. Line a serving plate with a piece of banana leaf.
  10. Arrange the pineapple pieces on it.
  11. Sprinkle peanuts on each pineapple piece.
