
Ingredients:
• ¾ cup – crushed Peanuts
• ¾ cup – minced Onion
• ½ cup – Brown sugar
• 3 slices tinned Pineapple
• 1 tsp – garlic, minced
• 2 tsp – coriander roots, washed and chopped
• 1 tsp – black pepper Corns
• 1 tbsp – light soya sauce
• 2 tbsp – oil
Method:
- Drain the pineapple from the syrup and cut each slice into 8 pieces.
- Crush garlic, coriander roots and pepper corns to a coarse paste.
- Heat the oil and fry onion till brown.
- Add the crushed garlic mixture and fry till fragrant.
- Add peanuts, Soya sauce and brown sugar.
- Mix well and add little salt if needed.
- Cook stirring till the mixture holds together.
- Cool slightly and shape into 1 cm round pellets.
- Line a serving plate with a piece of banana leaf.
- Arrange the pineapple pieces on it.
- Sprinkle peanuts on each pineapple piece.
