Ingredients:
• 1.5 kg – Brinjals
• 3/4 kg – Sugar
• 1200 g – Green chillies
• 2 Cloves – Garlic
• 4 – chillies
• 1 tbsp – Cumin seeds
• 1 tsp – Mustard Seed
• 1.5 bottle – Vinegar
• 3/4 bottle – sweet oil
• A few – Curry leaves
• Salt to taste
Method:
- Chop the brinjals and sprinkle salt on it
- Mince ginger, garlic and green chillies
- Keep aside half the minced ginger-garlic mixture
- Grind with vinegar the rest of the minced masala and spices
- Squeeze out the brine and remove the brinjal pieces and fry in a pan for a while
- Heat oil, add the curry leaves and the ground masala and fry well.
- Now add the fried brinjal pieces to the fried masala, the minced masala, set aside and rest of the vinegar and sugar
- Simmer on a low fire, till the oil separates. Serve hot.
