Ingredients:

• 1.5 kg – Brinjals
• 3/4 kg – Sugar
• 1200 g – Green chillies
• 2 Cloves – Garlic
• 4 – chillies
• 1 tbsp – Cumin seeds
• 1 tsp – Mustard Seed
• 1.5 bottle – Vinegar
• 3/4 bottle – sweet oil
• A few – Curry leaves
• Salt to taste

Method:

  1. Chop the brinjals and sprinkle salt on it
  2. Mince ginger, garlic and green chillies
  3. Keep aside half the minced ginger-garlic mixture
  4. Grind with vinegar the rest of the minced masala and spices
  5. Squeeze out the brine and remove the brinjal pieces and fry in a pan for a while
  6. Heat oil, add the curry leaves and the ground masala and fry well.
  7. Now add the fried brinjal pieces to the fried masala, the minced masala, set aside and rest of the vinegar and sugar
  8. Simmer on a low fire, till the oil separates. Serve hot.
