Ingredients:

• 2 cups gram flour
• 1 cup Yoghurt
• salt
• 1/2 tsp haldi/ Turmeric powder
• 1 tsp soda bicarb
• 1 tsp Mustard Seeds
• 2 tbsp oil
• 1 tsp Green chilli paste
• 1 tbsp Lemon juice
• chopped Coriander leaves and desiccated Coconut for garnish

Method:

  1. Mix the gram flour in a bowl with the yogurt and about one cup of warm water.
  2. Taste and add salt and mix again.
  3. Leave it aside to ferment for 3-4 hours.
  4. When this has fermented, add turmeric powder and green chilli-ginger paste and mix.
  5. Heat the steamer and grease a steel plate that fits into it, with 1/2 inch depth minimum.
  6. In a small bowl take lemon juice, soda bicarbonate, one tsp of oil and mix. Add it to the batter and whisk briskly.
  7. Pour batter into the greased thali and place it in the steamer.
  8. Cover and steam for 10 minutes.
  9. When a little cool, cut into squares and place in a serving bowl/plate.
  10. Heat remaining oil in a small pan.
  11. Add mustard seeds.
  12. When the seeds begin to crackle, remove and pour over the dhoklas. Serve garnished with chopped coriander leaves.
