Ingredients:

• 1 cup – Ricotta cheese(full fat)
• 1/2 cup – Carrot (grated)
• 1 cup – Sugar
• 2 cups – Milk Powder(low fat)
• 1/4 cup – Pistachios & Almond pieces
• 1 tbsp – Butter.

Method:

  1. Combine the ricotta cheese, sugar, milk powder and butter in a microwave safe bowl and blend them into a creamy paste.
  2. Keep the microwave on a high temperature for 5 mins and cook this milk mixture. The mix will double in volume. Stir once and keep aside.
  3. Meanwhile in another microwave bowl add a tsp of butter and grated carrot, and cook on high for 2 mins.
  4. Now add the grated carrot to the cheese mixture and microwave on a high temperature for 15 mins until it turns brown at the edges.
  5. Transfer to a flat dish and sprinkle the almonds and pistachio pieces on it.
  6. Keep aside and let it cool.
  7. Now cut into the desired shape.
