Ingredients:

• 1 pound – raw Prawns
• 2 tbsp – Lemon juice
• 1/2 tbsp – Jakarta sambal hot
• 1/2 tbsp – spicy chilli sauce
• 3 Cloves garlic, crushed
• 1 tbsp – vegetable oil
• 2 strips – thinly peeled Lemon rind
• 1 tomato, finely chopped
• 1 tsp – salt

Method:

  1. Shell and devein prawns.
  2. Heat oil in frying pan.
  3. Fry onion and garlic until onion is soft.
  4. Add Jakarta sambal, spicy chilli sauce and lemon rind.
  5. Then add prawns and fry, stirring constantly until prawns change colour.
  6. Add tomato and lemon juice and simmer on low heat until gravy is thick and oil starts to separate.
  7. Remove lemon rind.
  8. Stir in salt and serve immediately.
