Ingredients:
• 100 g – medium sized Prawns (cleaned, washed and deveined).
• 1 large Onion ( thinly sliced).
• 1 large Onion (ground into a fine paste).
• 1 tsp – Ginger paste.
• 1.5 tsp – Red Chilli powder.
• ½ tsp – Turmeric powder.
• 2 bay leaves.
• 4 cloves.
• 3 green cardamoms.
• 1 stick cinnamon.
• 2 cups – Coconut milk.
• 1.5 tsp – sugar.
• 2 tbsp – ghee.
• 3 to 4 slit green chillies.
• handful of chopped Coriander leaves (for garnishing).
• salt to taste.
Method:
- Heat ghee in a heavy bottom vessel.
- Add bay leaves, cloves, cardamoms, cinnamon and saute for half a minute.
- Add the sliced onions and fry till golden brown.
- Add the onion paste, ginger paste, red chilli powder and turmeric powder.
- Saute till the ghee separates.
- Add the prawns and fry for about 2 mins.
- Add the coconut milk, sugar and salt to taste.
- Cook till boiling point.
- Cover with a lid and then simmer for about 10 mins.
- Garnish with slit green chillies and chopped coriander leaves.
- Serve hot with steamed rice.
