Ingredients:

• 1 – cauliflower, medium size
• 1 – Onion
• 1 – Lime
• 1.5 cups – basmati Rice
• 3 cups – water
• salt to taste
• 1 tsp – Turmeric powder
• 2 tbsp – Ghee
• Cashewnuts (roasted in ghee)
• To fry in a tsp of oil and grind:
• 3 – Red Chillies
• 2 tsp – Coriander seeds
• 2 tsp – Bengal Gram dhal
• 1 tsp – Urad Dal
• 1/4 tsp – pepper
• 1/2 tsp – Jeera
• 1 tsp – Garam Masala powder

Method:

  1. Wash the rice 2 or 3 times and cook it with 3 cups of water. Cut cauliflower into small flowerets and keep immersed in salted water for 5 minutes. Wash well and boil it with little water for 5 minutes in microwave oven. Drain water after cauliflower is boiled.
  2. Add 1 tbsp oil in a pan. Fry 1 onion (chopped) until golden brown then add the boiled cauliflower with it. Add turmeric powder and salt as required.
  3. Add the ground mixture mix thoroughly and cook for 5 – 10 min.
  4. Squeeze one lime and add the juice to the above cooked vegetable and mix well.
  5. Add ghee and mix the vegetable with the cooked rice.
  6. Garnish with cashew nuts.
