
Ingredients:
• 1 – cauliflower, medium size
• 1 – Onion
• 1 – Lime
• 1.5 cups – basmati Rice
• 3 cups – water
• salt to taste
• 1 tsp – Turmeric powder
• 2 tbsp – Ghee
• Cashewnuts (roasted in ghee)
• To fry in a tsp of oil and grind:
• 3 – Red Chillies
• 2 tsp – Coriander seeds
• 2 tsp – Bengal Gram dhal
• 1 tsp – Urad Dal
• 1/4 tsp – pepper
• 1/2 tsp – Jeera
• 1 tsp – Garam Masala powder
Method:
- Wash the rice 2 or 3 times and cook it with 3 cups of water. Cut cauliflower into small flowerets and keep immersed in salted water for 5 minutes. Wash well and boil it with little water for 5 minutes in microwave oven. Drain water after cauliflower is boiled.
- Add 1 tbsp oil in a pan. Fry 1 onion (chopped) until golden brown then add the boiled cauliflower with it. Add turmeric powder and salt as required.
- Add the ground mixture mix thoroughly and cook for 5 – 10 min.
- Squeeze one lime and add the juice to the above cooked vegetable and mix well.
- Add ghee and mix the vegetable with the cooked rice.
- Garnish with cashew nuts.
