Ingredients:

• 2 cups – boiled Rice
• 4 – Green chillies
• Curry leaves
• 1 Onion (finely chopped)
• 1 tbsp – grated fresh Coconut
• 1/2 tbsp – coriander (finely chopped)
• 1/4 tsp – Cumin seed
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 1/4 tsp – Turmeric powder
• 2-3 pinches of Asafoetida
• salt to taste
• juice of half Lemon
• 1 tbsp – oil

Method:

  1. Heat oil in a heavy bottomed pan and add cumin and mustard seeds, and dal.
  2. Add green chillies, curry leaves, onions, asafetida.
  3. Cook till onions are light pink.
  4. Add rice, turmeric, salt, lemon, coriander, and coconut.
  5. Stir gently till well mixed.
  6. Cover and simmer till steaming hot.
  7. Serve hot with potato chips.
