Ingredients:

• 1 cup – cooked Rice
• 2 tbsp – Lemon juice
• Salt
• For tempering : 2 tbsp – sesame oil
• 4 tbsp – groundnuts/ Cashewnuts
• 4-5 – Red Chillies
• 3-4 – Green chillies (chopped)
• 1 tsp – Turmeric powder
• 1 bunch – fresh Basil leaves (chopped)

Method:

  1. Heat 1 tbs of oil in a pan.
  2. Add the nuts and fry till golden brown. Add the red and green chillies. Add turmeric. Saute.
  3. Add the basil leaves and saute (reserve some leaves for garnish).
  4. Turn off heat. Let it cool.
  5. Add the lime juice. Add the rice in small quantities and mix it in.
  6. Add the rest of the oil and mix.
