Ingredients:
• 1 cup – rice, washed and soaked for 30 mins.
• 1 cup – sprouted moong
• 2 Bay Leaves
• 2 green chillies, slit
• 4 black pepper
• 2 tbsp – oil
• 3 cups – water
• 1/4 tsp – Turmeric powder
• 5-6 Curry leaves
• 1/2 tsp – Mustard Seeds
• salt to taste
• Make a paste of:
• 1 cup – Coriander leaves
• 1/2 tsp – Garam Masala
• 1/2 cup – grated Coconut
• 2 Green chillies
• 1/2-inch Ginger
• 1/2 tsp – Amchoor (dry mango) powder
Method:
- Heat oil in a cooker.
- Add mustard seeds and let them splutter. Add bay leaves, chillies, curry leaves and pepper.
- Add sprouted moong and turmeric powder.
- Simmer for 5 mins.
- Add rice, salt and water.
- Cook till rice is almost half done.
- Add the paste and let it cook till rice is done.
- Serve hot with any vegetable curry.
