Ingredients:
• Tomatoes – 2
• Capsicum – 1/2
• Onion – 1
• Garlic – 1 Clove
• Carrot – 1/2
• Oregano – 1/2 tsp
• Basil – 1/2 tsp
• Curry powder – 1 tsp
• Paprika – 1/4 tsp
• Cayenne pepper – 1/4 tsp
• Olive oil – 2 tbsp
• Salt to taste
Method:
- Grill the capsicum and chop roughly.
- Chop the carrots very thinly as well as tomatoes and onions.
- Heat a non-stick pan, add olive oil.
- Add onions and fry until brown.
- Then add tomatoes, all powders, oregano, cayenne and stir well.
- Add the carrots, grilled capsicum and salt to taste.
- Cook for 3-4 mins, then serve with pasta or with chapattis.
