Ingredients:
• 1.5 cup – red beans
• Water – 1 cup
• Dried or fresh Orange peels – 2 rinds
• 1/2 cup – rock Sugar
• Pandan leaves – 2
• 1 cup – lotus seeds
Method:
- In a big pot, boil the water, add red beans, stirring occasionally
- When beans are cooked, add lotus seeds and orange peels.
- Once lotus seeds are cooked, toss in rock sugar and pandan. Discard orange peels.
- Let cool for 3 minutes, then serve in individual bowls.
