Ingredients:

• 1.5 cup – red beans
• Water – 1 cup
• Dried or fresh Orange peels – 2 rinds
• 1/2 cup – rock Sugar
• Pandan leaves – 2
• 1 cup – lotus seeds

Method:

  1. In a big pot, boil the water, add red beans, stirring occasionally
  2. When beans are cooked, add lotus seeds and orange peels.
  3. Once lotus seeds are cooked, toss in rock sugar and pandan. Discard orange peels.
  4. Let cool for 3 minutes, then serve in individual bowls.
