Ingredients:
• 1/2 kg – ladies fingers
• 1 tbsp – Garam Masala
• 4 tbsp – oil
• 1/2 cup – fresh grated Coconut
• 1 tsp – Red Chilli powder
• 1 to 2 – onions, finely chopped
• 1/4 tsp – Turmeric
• 1 small bunch – coriander
• 10 to 15 – sprigs leaves
• 1 – Lime
• 1 – onion, diced
• 1/2 tsp – amchur
• 1/4 tsp – Saunf powder
• 1/4 tsp – Jeera powder
• Salt, Sugar to taste
Method:
- For the filling: Coarsely grind the coconut, coriander leaves, salt, garam masala and sugar.
- Add the juice of 1 lime to this mixture. Mix well.
- Add finely chopped onion.
- Wash and dry the ladies fingers.
- Slit each from the bottom halfway to the stem.
- Stuff the slits with the coconut filling.
- When all the ladies fingers are stuffed, heat oil in a flat-bottomed pan.
- Add the remaining dry powders, then place the ladies fingers in the pan.
- Cook, covered, for 5 mins. Stir occasionally.
- Cook uncovered for 20 mins till done.
