Ingredients:
• 4 eggs
• 1.5 cups – flour
• 1.5 tsp + 1 pinch – baking powder
• 1.5 cups – castor Sugar
• 1.5 cups – Butter
• 4-5 tbsp – grated Coconut
• 1 tbsp – Lime juice
• 1 tbsp – vanilla essence
• 4-5 tbsp – Raspberry jam
Method:
- Preheat oven at 180 degree C. Sieve the flour along with baking powder and keep aside.
- Cream butter and sugar in a bowl.
- Add egg one at a time, followed by the lime juice, vanilla and flour mixture.
- The batter will be thick and not runny.
- In a greased tray, sprinkle some coconut and pour the batter.
- Drop half of the jam over the batter and sprinkle the remaining coconut.
- Bake in the preheated oven for 40 minutes or till a toothpick inserted in the centre comes out clean.
- Let it stand for 10 minutes.
- Brush the remaining jam over the cake and serve.
