Ingredients:

• 1-1/2 cup flour
• 2 tsp ground Cinnamon
• 1-1/2 tsp baking soda
• 1 tsp Nutmeg (optional)
• 1/2 tsp salt
• 3 cups grated Carrot
• 1-1/2 cup Sugar
• 1 cup oil
• 1 cup chopped Walnuts (can also use Almonds or cashew)
• 3 eggs beaten

Method:

  1. Sift together flour, cinnamon, soda, nutmeg, and salt.
  2. Combine carrots, sugar, oil, nuts, and eggs, and blend.
  3. Add dry ingredients to the egg mixture and pour into a 10-inch pan.
  4. Cook on high power in microwave for 10 to 11 minutes.
  5. If you feel the cake isn’t cooking evenly, keep changing the position of the pan.
  6. When done, the cake will pull away from the edges of the pan.
