Ingredients:
• 1-1/2 cup flour
• 2 tsp ground Cinnamon
• 1-1/2 tsp baking soda
• 1 tsp Nutmeg (optional)
• 1/2 tsp salt
• 3 cups grated Carrot
• 1-1/2 cup Sugar
• 1 cup oil
• 1 cup chopped Walnuts (can also use Almonds or cashew)
• 3 eggs beaten
Method:
- Sift together flour, cinnamon, soda, nutmeg, and salt.
- Combine carrots, sugar, oil, nuts, and eggs, and blend.
- Add dry ingredients to the egg mixture and pour into a 10-inch pan.
- Cook on high power in microwave for 10 to 11 minutes.
- If you feel the cake isn’t cooking evenly, keep changing the position of the pan.
- When done, the cake will pull away from the edges of the pan.
