
Ingredients:
• 100 g- self raising flour
• 100 g- unsalted Butter
• 100 g- caster Sugar
• 25 g- sultanas or Coconut powder or Orange peels
• 2 -eggs
• 1 tsp- baking powder
• 1 tsp -milk
• 2- 3 drops- flavouring
Method:
- Preheat oven at 200 C. Sieve flour and baking powder.
- Cream butter and sugar well.
- Add eggs gradually and mix well.
- Fold in flour gently and add milk if it is too dry to get a dropping consistency.
- Add fruit and flavouring, mixing lightly.
- Fill cake case up to 2/3 of volume.
- Bake for 15 mins on top shelf.
- Allow to cool before serving.
