Ingredients:

• 2 cup – basmati Rice (wash and soak it in lukewarm water for 20 mins)
• 1/2 cup – Coconut Milk
• 3 cups – water
• 1 tbsp – ginger, grated
• 6 – cardamom, crushed
• 6 – Cloves
• 6 – Cinnamon small sticks
• 3 – Bay Leaves
• 5 – Green chillies
• 5 – Garlic flakes, minced
• 1/2 cup – onions, finely chopped
• 1 tbsp – Cashew nut
• 3 tbsp – oil and Ghee each
• Salt to taste

Method:

  1. Heat oil and ghee mix in a kadai.
  2. Season with green chillies, ginger, garlic, onion, cashew nuts, cloves, cinnamon and bay leaves.
  3. Fry the mixture till onions turn brown and the raw smell goes
  4. Add thick coconut milk to the mixture and allow it to boil.
  5. Remove the kadai from the stove and let cool.
  6. Add soaked rice, 3 cups of water and salt to the above and cook it in a rice cooker/pressure cooker for 1 whistle.
