
Ingredients:
• 2 cup – basmati Rice (wash and soak it in lukewarm water for 20 mins)
• 1/2 cup – Coconut Milk
• 3 cups – water
• 1 tbsp – ginger, grated
• 6 – cardamom, crushed
• 6 – Cloves
• 6 – Cinnamon small sticks
• 3 – Bay Leaves
• 5 – Green chillies
• 5 – Garlic flakes, minced
• 1/2 cup – onions, finely chopped
• 1 tbsp – Cashew nut
• 3 tbsp – oil and Ghee each
• Salt to taste
Method:
- Heat oil and ghee mix in a kadai.
- Season with green chillies, ginger, garlic, onion, cashew nuts, cloves, cinnamon and bay leaves.
- Fry the mixture till onions turn brown and the raw smell goes
- Add thick coconut milk to the mixture and allow it to boil.
- Remove the kadai from the stove and let cool.
- Add soaked rice, 3 cups of water and salt to the above and cook it in a rice cooker/pressure cooker for 1 whistle.
