
Ingredients:
• 2 cups – Pumpkin white, diced
• 3 – Potatoes
• Green beans – 5-6
• 2 – Carrots
• 1 -Drumstick
• 1/2 cup – Colocasia (seppankilangu), diced
• 1 – Plantain Banana (raw)
• 2 – Eggplant
• Curry leaves – a few
• Salt to taste
• 3 cups – Fresh Curd
• 2 tbsp – Coconut oil
• 1 tsp – Rice flour
• Turmeric powder – 1 tsp
• (Vegetables of your choice)
• For grinding:
• 1.5 cup – Fresh Coconut
• 7 – Green chillies
• 1 tbsp – Poppy seeds.
Method:
- Dice all the vegetables into 2-inch pieces and cook them and keep aside.
- Now grind the coconut, green chillies and poppy seeds into a smooth paste.
- Combine all the cooked vegetables, ground paste and curd in a large bowl.
- Add salt, coconut oil and curry leaves, turmeric powder and rice flour to it and mix well.
- You can add a little water if it is too thick.
- Cook on a low flame for 10 minutes.
- Avial is ready to serve with adai or rice.
