Ingredients:

• 1 cup – grated Carrots
• 1 cup – Sugar
• 1/2 tsp – vanilla essence
• 3 tbsp – Ghee
• 1 cup – fresh Milk or 3 tbsp – condensed Milk
• 3 tbsp – chopped nuts

Method:

  1. Melt the sugar in a thick pan with 1/2 cup water till a fairly thick syrup is obtained.
  2. Add the grated carrot and milk or condensed milk and simmer. Stir constantly until the mixture begins to crystallize and looks transparent.
  3. Add the essence, lime juice and ghee and mix well.
  4. When the mixture starts to leave the sides of the pan, pour out onto a greased plate.
  5. Sprinkle the nuts on top. Cut into squares when quite cold.
