Ingredients:

• 1 cup – skinless chicken, diced
• Salt to taste
• 1 tsp – freshly ground black pepper powder
• 1/2 cup – Corn flour
• Oil for frying
• 2 tsp – groundnut oil
• 2 tsp – unsalted cashewnuts/kaju
• 1 broken Red Chilli
• 100g – beans, chopped

Method:

  1. Mix chicken pieces with salt and pepper.
  2. Drop the chicken in the corn-starch and mix well, coating completely.
  3. Fry the chicken for 3 min until golden brown.
  4. Drain on paper towels.
  5. Heat water, add chopped beans and blanch. Drain and keep aside.
  6. In a large saute pan, heat the oil, fry the cashews until golden.
  7. Add the peppers and blanched beans.
  8. Saute for 2 minutes.
  9. Remove from the heat.
  10. Toss the chicken and cashew mixture together and serve.
