Ingredients:
• 2.5 cups – flour
• 2/3 cup – shortening
• 1.5 cups – Sugar (powdered)
• 1.5 cups – mashed Banana
• 1/2 cup – nuts
• 2/3 cup – Butter milk
• 2 – eggs
• 1.5 tsp – baking powder
• 1 tsp – soda
• 1/2 tsp – salt
Method:
- Soften shortening. Sieve dry ingredients.
- Add well mashed bananas and just a little buttermilk to wet the flour.
- Blend well and add the remaining buttermilk and the eggs.
- Beat well for a couple of minutes.
- Stir in chopped nuts.
- Bake in a paper-lined pan at 180 degree C for 40 minutes.
