Ingredients:
• Carrots – 2
• Baby Corn – 4
• Potatoes – 1
• Green pepper – 1
• Mustard – 1 tsp
• Cumin seeds – 1 tsp
• Turmeric powder – a pinch
• Chilli powder – 2 tsp
• Garam Masala powder – 1/2 tsp
• Coriander powder – 1 tsp
• Salt – to taste
• Powdered Mint – 1 tsp
• Cooking oil – 3 tbsp
• Tomato sauce – 3 tbsp
Method:
- Peel the carrots. Deseed the capsicum. Chop all the vegetables into small equal sized pieces.
- Heat oil in a frying pan, add the mustard and cumin seeds and allow them to splutter.
- Add a pinch of turmeric powder. Add the chopped vegetables and fry.
- Add the spices and mix well.
- Sprinkle water now and then to ensure that the vegetables are properly cooked.
- After the vegetables are cooked, reduce the flame. Add tomato sauce and stir for just a few minutes more. Serve hot.
