Ingredients:

• 1 cup – Mixed lentils (chickpeas, green gram, Kabuli Channa or any other dried beans)
• 3 – Medium sized Onions
• 2 – Tomatoes
• 1 small ball – Tamarind
• 2 – Brinjal
• 2 – Potatoes
• Grind together:
• 1/4 cup fresh coconut,
• 1 Onion lightly sauted,
• 1 sp – Chilli powder,
• 1/2 bunch – Coriander leaves

Method:

  1. First boil the lentils with chopped onion, tomatoes, potatoes in a pressure cooker (min 5-6 whistles).
  2. Add the ground paste, tamarind extract, brinjal, salt.
  3. Bring to boil and continue to simmer till the curry thickens.
  4. Season with mustard and curry leaves.
  5. You can add chopped carrots, for added taste.
  6. This curry goes well with both rice and rotis.
