Ingredients:

• 1/2 cup – basmati Rice
• 2 tbsp – vegetable oil
• 1 cup – chopped veggies (green chilli, carrot, green peas, Onion and cleaned and cut mushrooms)
• 1 tsp – Ginger Garlic paste
• 1.5 tbsp – yogurt
• 1 cup of Coconut Milk (if using Coconut Milk, do not use nut paste and yogurt)
• 1 tsp – Garam Masala powder (homemade Garam Masala powder)
• Handful – Mint leaves
• Handful – Coriander leaves
• Salt to taste
• Spices for seasoning
• 1 – Star anise
• 1 – small Bay Leaf
• 2 – green Cardamom
• 1/4 tsp – black cumin
• 1 small strand – Mace
• 2 inch piece – Cinnamon stick
• 4 – Clove

Method:

  1. Chop mushrooms just before cooking as they tend to discolour fast.
  2. Heat oil in a casserole or pan, add all the spices and saute
  3. Add onions and green chillies, fry till golden brown
  4. Add ginger garlic paste and saute
  5. Add mint leaves, saute
  6. Add vegetables and mushrooms, fry for 2 mins
  7. Add water or coconut milk
  8. Add salt and homemade garam masala, boil water
  9. Add nut paste or yogurt, if not using coconut milk
  10. Add the rice and cook till no water is left
  11. Add coriander leaves. Cover and cook till fully done; if needed, sprinkle some water
  12. Serve hot.
