Ingredients:
• 1/2 cup – basmati Rice
• 2 tbsp – vegetable oil
• 1 cup – chopped veggies (green chilli, carrot, green peas, Onion and cleaned and cut mushrooms)
• 1 tsp – Ginger Garlic paste
• 1.5 tbsp – yogurt
• 1 cup of Coconut Milk (if using Coconut Milk, do not use nut paste and yogurt)
• 1 tsp – Garam Masala powder (homemade Garam Masala powder)
• Handful – Mint leaves
• Handful – Coriander leaves
• Salt to taste
• Spices for seasoning
• 1 – Star anise
• 1 – small Bay Leaf
• 2 – green Cardamom
• 1/4 tsp – black cumin
• 1 small strand – Mace
• 2 inch piece – Cinnamon stick
• 4 – Clove
Method:
- Chop mushrooms just before cooking as they tend to discolour fast.
- Heat oil in a casserole or pan, add all the spices and saute
- Add onions and green chillies, fry till golden brown
- Add ginger garlic paste and saute
- Add mint leaves, saute
- Add vegetables and mushrooms, fry for 2 mins
- Add water or coconut milk
- Add salt and homemade garam masala, boil water
- Add nut paste or yogurt, if not using coconut milk
- Add the rice and cook till no water is left
- Add coriander leaves. Cover and cook till fully done; if needed, sprinkle some water
- Serve hot.
