
Ingredients:
• Brinjal – 250 gm
• Tomato – 100 gm
• Tamarind – Lemon size
• Onion – 3
• Green chillies – 3
• Ginger-garlic paste – 1 tsp
• For Roasting:
• Groundnuts – 1 tbsp
• Sesame – 1 tsp
• Poppy Seeds – 1 tbsp
• Coriander seeds – 1 tsp
• Fenugreek seeds – 1/2 tsp
• Garam Masala – 1/2 tsp
• Cumin – 1/2 tsp
Method:
- Roast the ingredients for the masala separately and mix together.
- Grind to a fine paste with a lemon size tamarind ball.
- Put oil in a kadai and fry finely chopped onion.
- Add ginger garlic paste and stir.
- Add the ground masalas and fry.
- Add the finely chopped tomatoes, slit green chillies and fry.
- Add salt accordingly.
- Slit the brinjal and fry in a little oil in a separate kadai and keep it aside.
- Steam the brinjals with a little salt in the microwave.
- Add the brinjals in the gravy and stir.
- Cover and cook till the oil separates.
- Serve.
