
Ingredients:
• To prepare the kozhukattai:
• 1 cup – Rice flour
• 1 tsp – salt
• 1 tbsp – oil
• To prepare the poornam:
• 1 cup – grated Paneer
• 1 tbsp – finely chopped Almonds
• 1 tbsp – finely chopped Pistachios
• 1 tbsp – finely chopped Cashew nuts
• 1/2 tsp – Cardamom powder
• 1 cup – powdered Jaggery
• 1 tbsp – Ghee
Method:
- Make the jaggery syrup by heating the jaggery in a thick bottom kadai.
- Filter the syrup to get rid of the dust particles.
- Heat ghee in a kadai and roast the dry fruits lightly.
- Add all these to the jaggery syrup along with the cardamom powder. Heat them till they get to a thickened poornam mixture.
- For the kozhukattai, heat 1 cup of water in a kadai.
- Add a little salt to the water.
- When water boils, add rice flour and stir well.
- Once the flour thickens, remove from fire and set aside.
- Mix the dough well with a little oil and make small balls out of the mixture.
- Flatten the balls and then press with your thumb to get a cup shape.
- Fill it in the poornam and then steam cook the kozhukattai.
