
Ingredients:
• 150ml. Chicken stock
• 50 gms. Coconut Milk
• 30 gms. Thai galangal, chopped
• 30 gms. lemongrass
• 20 gms. sliced red Onion
• 10 gms. Thai Lime leaves
• 15 gms. Thai Red Chilli
• 150 gms. Chicken breast, sliced
• 2 tsp. Lime juice
• 2 tsp. Oyster sauce
• 2 tsp. fish sauce
• 30 gms. straw Mushroom
• Salt to taste
• 20 gms. Thai parsley, chopped
• 30 gms. coriander leaves, chopped
Method:
- Heat chicken stock and coconut milk along with galangal, lemongrass and red onion, Thai lime leaves and red chillies. Let it boil.
- Add chicken, lime juice, oyster sauce, fish sauce, straw mushroom and salt.
- Remove from heat and transfer to a serving bowl.
- Garnish with Thai parsley and coriander leaves.
