Ingredients:

• 1 medium head Cauliflower
• 4 medium Potatoes
• 2 medium Tomatoes
• 4 tbsp
• chopped Coriander leaves
• 2 large Onions
• 1 piece Ginger
• 4 Green chillies (adjust to your taste)
• 1/4 tsp. Turmeric
• 1/2 tsp. Red Chilli powder (adjust to your taste)
• 3/4 tsp. coriander powder
• 3/4 tsp. Jeera powder
• 1/2 tsp. Garam Masala powder (adjust to your taste)
• Salt
• 2 tbsp. oil
• 1/4 tsp. mustard
• 1/4 tsp. Jeera
• 1/4 tsp. Methi
• 2 tsp. Lemon juice (optional)

Method:

  1. Cut cauliflower into fairly big florets. Chop onions into fine slices. Mince ginger. Chop tomatoes.
  2. Cube potatoes into 1 inch cubes and cook on high for 12 minutes in the microwave, drain and set aside.
  3. In the meantime, heat oil, add mustard, jeera and methi and fry till they splutter.
  4. Add chillies and ginger, then the onions and fry till onions are pinkish.
  5. Wash the cauliflower in hot water, drain and add to the onions and saute for 3 minutes.
  6. Add 1/4 cup water, cover and cook on high for 4 minutes.
  7. Remove cover, add tomatoes and fry till tomatoes are softened.
  8. Add salt and all the masala powders and stir to mix.
  9. Then add the potatoes and stir gently (try not to mash the potatoes too much).
  10. Heat on low for 2 minutes.
  11. Add lemon juice and coriander, stir to mix and serve with chapattis or naan.
