Ingredients:
• Medium sized Tomatoes – 6
• Medium sized Brinjals – 2 (chopped)
• Small Onion – 1 (chopped)
• Capsicum – 1 (chopped)
• Garlic – 2 Cloves (minced)
• Pepper powder to taste
• Salt to taste
• Oil to fry
Method:
- Slice top from tomatoes and scoop out flesh. Mix the tomato flesh with remaining vegetables and seasoning.
- Heat oil. Add vegetable mixture and fry till cooked and almost dry.
- Stuff the tomatoes with the mixture and place under a grill for one minute.
- Serve hot.
