
Ingredients:
• 1 tbsp – garlic, chopped
• 4 tbsp – oil
• 200 gms – fish, thinly sliced
• 200 gms – chicken, thinly sliced
• 4 – eggs
• 2 cups – cooked rice, cooled
• 1 cup – diced Pineapple
• 2 tsp – Sugar
• 3 tbsp – fish sauce (nam pla)
• 1 – green onion, cut finely
• Garnish Ingredients:
• Fresh pickles
• 2 – cucumbers, sliced
• 1 tsp – chilli peppers, or to taste
• 1 tbsp – cilantro/coriander, chopped
• 2 tsp – ground white peppers
• 1 tbsp – Tomato and chilli sauce
Method:
- Fry garlic in oil until it turns golden brown over medium heat. Increase heat to medium high, add chicken and fish.
- Cook until they are almost done, add eggs and scramble.
- Cook halfway through, add rice and pineapple, and mix quickly.
- Sprinkle sugar, white peppers, fish sauce, green onions and mix well.
- Cook for about 2 mins more, stirring constantly.
- Then remove from heat.
- Serve hot with garnish ingredients sprinkled on top.
