Ingredients:
• 1kg – fresh Cauliflower
• 1 small bunch fresh Methi leaves
• 1.5 tsp – Ginger Garlic paste
• 3 Green chillies (finely chopped)
• 4- medium sized Tomatoes (finely chopped)
• 2.5 tsp – coriander powder
• 1.5 tsp – Red Chilli powder ½ tsp – Turmeric powder
• finely chopped Coriander leaves (to garnish)
• 8 tbsp – oil
• salt to taste
Method:
- Cut the cauliflower into very small florets and wash well.
- Finely chop the methi leaves and wash well.
- Heat oil in a kadai, add ginger garlic paste and green chillies.
- Fry for a minute, add the cauliflower, methi leaves, salt and turmeric powder.
- Saute on a low flame till the cauliflower starts turning brown in colour.
- Keep mixing at regular intervals. Add the tomatoes.
- Saute for 8-10 mins on a medium flame till the tomatoes are tender.
- Add coriander powder and red chilli powder and cook on a low flame till the oil separates.
- Garnish with finely chopped coriander leaves and serve with hot chapattis, mango pickle and any dal.
